Pancakes

Today I made pancakes. This pancake recipe is taken from ' Joy Of Cooking '. These pancakes are the best from all the other recipes I have tried. The recipe is:

Whisk together in a large bowl,
-1 1/2 cups of all-purpose flour
-3 tablespoons of sugar
-1 1/2 teaspoon baking powder
-1/2 teaspoon salt
-1/2 teaspoon of baking soda
Whisk together in another bowl,
-1 1/2 cups buttermilk
-3 tablespoons unsalted butter, melted
-2 large eggs
-1/2 teaspoon vanilla extract (optional)

Pour the wet ingredients over the dry ingredients and gently whisk them together, mixing just until combined. 

Spoon 1/3 cup batter onto the preheated griddle for each pancake, nudging the batter into rounds. Cook until the top of each pancake is speckled with bubbles and some bubbles have popped open, then turn and cook until the underside is lightly brown.

Double Chocolate Cookies

Today I made double chocolate cookies. This recipe is taken from a cookbook called 'The Hummingbird Bakery Cookbook'. These are probably the best tasting cookies I have EVER had, so I had to share it. This recipe can make 12 cookies. Here is the recipe. You will need:
-50 g unsalted butter
-450 g chocolate, roughly chopped
-2 eggs
-170 g soft light brown sugar or light muscovado sugar
-1/4 teaspoon vanilla extract
-85 g plain flour
-1/2 teaspoon salt
-1/2 teaspoon baking powder
-2 baking trays, lined with greaseproof paper

Directions:

1. Preheat the oven to 170 C (325 F ) gas 3.
2.Put the butter and half the chocolate in a heatproof bowl over a sauce pan of simmering water (do not let the base of the bowl touch the water). Leave until melted and smooth.
3.Put the eggs, sugar and vanilla extract in a freestanding electric mixer with a paddle attachment (or use a handheld electric whisk) and beat until well mixed. Pour in the chocolate mixture, beating on slow speed until well combined.
4. Sift the flour, salt and baking powder into a separate bowl, then stir into the chocolate mixture in 3 additions, mixing well after each addition (scrape any unmixed ingredients from the side of the bowl with a rubber spatula). Finally, stir in the remaining chocolate until evenly dispersed. 
5. Arrange 6 equal amounts of cookie dough on each prepared baking tray. Make sure that the cookies are spaced apart to allow for spreading while baking. Bake in the preheated oven for 10-15 minutes, checking regularly after 10 minutes. They are ready when the tops start to crack and look glossy. Leave the cookies to cool slightly on the trays before turning out onto a wire cooling rack to cool completely.

Homemade Peanut Butter Granola Treats (no bake)

Today I made some peanut butter granola treats. You do not need to bake them although you may if you want it to be more crunchy. Here are the things you will need:

-Mixing bowl
-Mixing utensil
-Tray or container
- Peanut butter (creamy or crunchy)
-Mashed banana
-Granola
-Extra ingredients of your choice (raisins, chocolate chips, cereal, etc.)
 
The directions are:
1. Add in as much peanut butter as you want into the mixing bowl.
2. Add about 1 whole mashed banana into the peanut butter. Mix until well combined.
3. Mix in all your other ingredients.
4. Transfer your mixture into the tray/container 
5. Put your tray/container with the mixture inside it into the freezer for at least 6 hours although it would be best if you put it in the freezer overnight.
